Oatmeal Peanut Butter & Chocolate Chip Cookies

It’s snowpocalypse here in New York. But it did not deter me from stomping through a blizzard to get to Key Foods. My boyfriend thought i was crazy, and half way there i thought that he might be right. While i was there getting stuff to make a sandwich, i realized i wasn’t going to leave the house after this. Baking was the perfect thing to do. I wanted to do something simple, so i went for oatmeal cookies. To “jazz” them up, i threw in milk chocolate chips and Reese’s peanut butter chips.


Oatmeal Peanut Butter & Chocolate Chip Cookies

1 cup [2 sticks] unsalted butter
1 cup light brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
3 cup rolled-oats
1 cup all-purpose flour
1/4 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cup Reese’s Peanut Butter Chips
1 1/2 cup Milk Chocolate Chips

Heat oven to 350 degrees.
In one bowl, mix sugars and butter together [on medium speed for 3 minutes or so if you use a stand mixer]. Mix in vanilla and set aside.
In another bowl stir oats, flour, baking powder & soda, and cinnamon together till well mixed. Slowly add flour mixture to butter mixture. Start and end with flour mixture.
Add in Peanut Butter and Milk Chocolate chips.
Scoop tablespoon sized balls of dough onto a non-stick cookie sheet [i use one with a Silpat or parchment paper].
Bake in oven for 15-18 minutes, or until golden brown around edges or toothpick comes out clean.

Drink with some milk, it’s the best.
