Banana Dulce de Leche Cupcakes

These may be the best cupcakes i’ve ever made. Incredibly moist and so flavorful. I love banana muffins and cupcakes. Also, really easy to make. This morning i set out to make pumpkin cupcakes since it’s autumn, and every single grocery store in Queens didn’t have pumpkin in can. Weird, right? I see it every single day and the one time i need it, it’s nowhere to be found. What the hell happened to it? Was there a recall? So i nixed that idea and went with banana cupcakes instead. I’ve had bananas with caramel sauce, so it just made sense to make these. I generally used Martha Stewart’s recipe for banana cupcakes but added a pinch of nutmeg, ginger, and cinnamon.

Banana Dulce de Leche Cupcakes

frosting recipe from Joy the Baker

1 1/2 cups all-purpose flour (spooned and leveled)
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
pinch of ginger
pinch of nutmeg
1/4 teaspoon cinnamon
1/2 cup (1 stick) unsalted butter, melted
4 1/2 mashed bananas
2 large eggs
1/2 teaspoon pure vanilla extract

Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Make a well in center of flour mixture. In well, mix together butter, mashed bananas, eggs, and vanilla. Stir to incorporate flour mixture (do not overmix). Dividing evenly, spoon batter into muffin cups.
Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes. Remove cupcakes from pan; cool completely on a wire rack.

Dulce de Leche buttercream frosting
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 1/2 tablespoons heavy cream
1/2 teaspoon vanilla
2 cups powdered sugar
1/4 teaspoon sea salt
1/4 cup + 2 tablespoons prepared dulce de leche

Cream together softened butter and powdered sugar on low using an electric mixer. Add cream and vanilla and beat on medium speed until smooth and no lumps appear. Scrape down the sides of the bowl. Add the prepared dulce de leche and beat to incorporate.

**It’s optional, but i found it to be a really awesome addition to the cupcakes, but if you have some pink sea salt, sprinkle some on top of frosted cupcakes.
